Black Bean and Quinoa – Gluten Free, Dairy Free, Yeast Free

 

Ingredients

  • ½ cup quinoa
  • ¼ cup pearl barley
  • 4 cubes frozen spinach
  • 1 small red onion (chopped)
  • 1 cup black beans
  • 1 kallo yeast free stock cube
  • himalayan salt
  • freshly ground black pepper
  • 1 handful fresh mint leaves (chopped)
  • 2 sprigs fresh parsley (chopped)

 

Instructions

  1. Put everything except fresh herbs, in a medium pan.
  2. Cover with filtered water and cook for 15 minutes.
  3. Add chopped herbs. Cook for 5 minutes.
  4. Serve
